A Rocky Start and a New Beginning
Chef Sanchez’s culinary adventure didn’t come without its trials. After serving in the United States Marine Corps, he faced significant challenges stemming from Traumatic Brain Injury and Post-Traumatic Stress Disorder. Following his service, he returned to his roots in New York City, where cooking provided him with a much-needed refuge from his struggles.
“In those early days, cooking was my escape,” Sanchez shared. “When I was in the kitchen, I could focus. I fell deeply in love with it.” That love only grew as he enrolled in the Culinary Institute of America and honed his craft in some of the most prestigious fine-dining establishments in New York.
Following Passion Over Paychecks
Uncommon for many chefs, Sanchez found himself in a unique position: he wasn’t struggling financially. This freedom allowed him to explore the culinary world without the heavy burden of monetary pressures. “I was in a position to learn,” he recounted. “So, I often worked unpaid, simply to absorb as much knowledge and skill as I could.” It was during this time that he discovered his knack for pizza-making, ignited in part by his time stationed in Italy.
From the Big Apple to a Southern Comfort
Sanchez eventually made the leap to Columbia, seeking a different pace of life and the chance to create his culinary mark on a smaller stage. His journey has taken him through several beloved local establishments, such as Bourbon and Hampton Street Vineyard, where he worked to bring a fresh touch to Columbia’s dining scene.
After a decade in various roles, Sanchez felt ready to claim his culinary throne. With dreams of independence, he began a series of exciting ventures, eventually leading him to his latest project: Best Wings of Columbia, located at 1410 Colonial Life Boulevard West.
A Twist on Tradition
At Best Wings, Sanchez is determined to elevate the humble chicken wing. Gone are the days of standard bar fare; instead, diners can look forward to dishes like Korean fried chicken wings served with a fruity gochujang ketchup and zesty lemon-pepper chicken wings. But that’s not all! You’ll also find his delicious Neapolitan-style pizza, crafted with a treasured 10-year-old sourdough starter.
Keeping his proud Afro-Puerto Rican heritage alive in the kitchen, Sanchez rotates in a variety of Latin-inspired specials. From crispy empanadas de yuca to tacos made from scratch, his menu embraces fusion and flavor like no other. “I want to offer my community something special,” he said. “Everyone deserves good food, regardless of their background or economic situation.”
Cooking for Connection
As Sanchez looks ahead, he is excited to use food as a platform for education and connection. Pursuing a degree in anthropology at Midlands Technical College, he envisions hosting supper clubs that bring people from diverse cultures together to share stories through food.
“Food tells a story,” he reflected. “I want people to experience that and learn the history behind each dish. It’s about more than just eating – it’s about connecting with one another.”
The Pursuit of Perfection
While Sanchez strives for culinary excellence, he admits perfectionism can be a double-edged sword. “I’m always working to create my own version of a masterpiece,” he explained. “But I have to remember that I can’t pour my heart into every plate like it’s my last. I need to create consistently while finding joy in the process.” Sanchez describes his journey in the kitchen as his ‘Sistine Chapel’, pouring his heart and soul into each dish he creates, turning the day-to-day into his art form.
