COLUMBIA — Farewell to a Local Mixology Star

Columbia’s cocktail scene is set to change as {{Grant McCloskey}}, a well-known bartender who has spent nearly a decade shaking and stirring in the capital city, prepares for a new adventure in Philadelphia. McCloskey took to social media on September 6 to announce his departure, marking the end of an era for Columbia’s vibrant bar and restaurant landscape.

A Journey Through Cocktails

McCloskey first made his mark on the scene with the opening of Ratio, a small plates restaurant in Elgin specializing in Peruvian cuisine. After transitioning from his role as the bar manager at The Aristocrat in downtown Columbia, McCloskey teamed up with chef-owner Javier Uriarte to bring some unique flavors to the community in late 2020, right when the dining industry was grappling with the effects of the COVID-19 pandemic. Despite those challenges, Ratio quickly rose to fame as a favorite spot for both food and cocktails.

The partnership between McCloskey and Uriarte was special, as they both had a shared vision for what their restaurant could be. “He definitely opened my eyes to trying new drinks,” Uriarte shared. “Apart from him being talented enough to be able to do different cocktails, he had the heart for the knowledge… I see him doing great things because of that.” Their mutual dedication paved the way for a bar program filled with creative drinks that kept customers coming back.

The Next Step

In March of this year, McCloskey took on a new challenge at The Hollow, an upscale restaurant in the Vista serving up wild game dishes. This latest role was made even more special due to his long-standing friendship with the restaurant’s owner, Chris Fitz, who has been a staple in Columbia’s bartending world. Fitz called McCloskey an “instrumental” figure in getting the cocktail program up and running, while also training the bar staff to ensure the new restaurant’s success.

As Columbia’s craft cocktail scene continues to evolve, it’s clear that McCloskey has been a significant part of that growth. He came into the industry during a time when bartenders, like David Adedokun and Jake Smith, were pushing boundaries and introducing fresh ideas. Reflecting on his time here, McCloskey shared, “It’s been such a cool opportunity to be a part of the cocktail scene in Columbia at the time that I’ve been here.” He noted how rewarding it has been to contribute to this landscape, particularly as it became increasingly exciting and innovative.

A Bittersweet Goodbye

As McCloskey prepares to leave, there is a sense of bittersweet nostalgia. Many in the community are feeling the impact of his departure, especially given the recent shuttering of several beloved local establishments due to economic pressures. This leaves a bittersweet taste for those who have admired his craftsmanship behind the bar.

After a few weeks at The Hollow to help ensure a smooth transition for his successor, McCloskey will start his journey to Philadelphia at the beginning of October. Although he is moving on, he leaves behind a robust legacy in Columbia, one filled with unforgettable cocktails and memories shared with patrons who have come to know him over the years.

The Future Beckons

So what’s next for McCloskey in Philly? He expressed excitement about the new opportunities and challenges that await him there—an eagerness to see how he can push his craft even further. “I’m excited because it’s another challenge,” he said. “It’s another opportunity to see where my ceiling is and to push what I’m doing, push myself a lot harder than I am right now.” With his talent, dedication, and established relationships, there’s no doubt that Columbia will miss him dearly, but his future looks bright.
